Bundled with some energy bites + cookies for a postpartum mom
My cousin is 3 weeks postpartum and planning this meal for her brought me back to those early days. Christian would ask me what I wanted for dinner (obviously with the best intentions) but when you are that raw, overwhelmed and overstretched, even a simple question can send you over the edge.
The decision fatigue is sooo real, and if you are hangry on top of that breastfeeding appetite?! Oh boy. One more decision can feel like one more thing on your already full plate.
That is why I always say a yummy, familiar meal, paired with comforting bakes + snacks, is a postpartum mom’s dream. So that is exactly what I aimed for here: a fresh pasta lasagna as the star, with a little bonus on the side- energy (or lactation) bites and my brown butter chocolate chip cookies.

Ingredients
For the pasta I use King Arthur’s recipe on the bag, detailed below:
4 cups (580g) King Arthur Pasta Flour
1 teaspoon table salt
6 large eggs
For the marinara:
1 28oz can of crushed San Marzano tomatoes
1 6oz can of tomato paste
1 small pack of ground beef (I used lean grass fed but use what you like)
3 cloves of garlic
Half a white onion
Handful of freshly chopped basil + parsley
